Mushrooms harvested from a growing bed are deposited on a carrier having a plurality of individual recesses (13), each for receiving an individual mushroom (14) by supporting the under-side of the cap with the stalk projecting downwardly. The carrier is typically moulded from a plastics material and comprises a strip-like base wall (10), from which upstands a vertical web (11) disposed centrally of the base well. The carrier, when fully loaded with mushrooms, is moved into a compartment of a multi-compartmented storage structure (35) configured to allow the flow of air through the structure. The structure is then moved into a cold room so that all of the carried mushrooms are cooled down to the optimum storage temperature. Only prior to sale are the mushrooms removed from the storage structure and the stalks trimmed to the required length.
