PROBLEM TO BE SOLVED: To reduce a bitter taste component easily from turmeric that has a peculiar potent bitter taste and is not suitable for daily eating or drinking, without reducing the content ratio of curcumine that is a component manifesting an effective anti-oxidation activity. SOLUTION: This method for reducing a bitter taste component of turmeric is to extract the bitter taste component by an organic solvent, and make a turmeric product reduced with the bitter taste component by the organic solvent extraction.
