Water is extracted from the exhaust drying air from a dishwashing machine using a condenser containing a phase change material which is subsequently cooled by fresh water entering the machine for a new washing cycle. A dishwashing machine (5) includes a cooling device (9, 10, 11) for extracting the moisture from exhaust drying gas, the cooling device containing a phase change material (10) whose phase transformation point is selected such that the drying gas causes a phase transformation in the phase change material and is thereby cooled. Preferably the inlet lead (4) for fresh water to the machine is in thermal contact with the phase change material (10) so that the fresh water entering the machine for the next washing cycle cools the phase transfer material (1O) in readiness for the next drying cycle.
