<p>Disclosed is a frozen aerated product containing ice crystals with an average diameter of 10 - 30 microns and optionally fat globules with an average diameter of 8 - 20 microns. Also disclosed is an apparatus for producing the frozen product comprising two identical endless screws (1, 2), identical and parallel, rotating about their axis and turning in the same direction, located in a casing (3) fitted at one of its ends with an extrusion nozzle (6) and at the other with means (4, 5) for feeding with the composition to be frozen and, in an intermediate area, with means (9, 10) for feeding with air, the casing (3) being provided with a jacket in which refrigerating fluids circulate.</p> |
