A process for producing a composite cheese comprising at least two different kinds of cheese combined together in a single close matrix. Composite cheese products consisting of two or more different kinds of cheese combined together in a close matrix, and made by the steps of (a) adding lactic starter and rennet to milk, (b) allowing the mixture to coagulate and cutting the product to form a mixture of curds and whey, (c) separating the whey from the curds, (d) (i) introducing the curds into a cheese mould, (ii) removing the curds from the cheese mould, cutting the curds into pieces, forming a shaped cheese body from pieces of curd of different kinds of cheese, and returning the composite cheese into the cheese mould, (e) pressing the curd into a cheese, (f) optionally treating the cheese in a brine bath and (g) ripening the cheese.
