SUBSTANCE: method involves extracting bitter substances from citrus fruits by means of nonpolar liquefied gas; treating with acidified aqueous solution containing mixture of jasmonic acid and chitosan; holding them; impregnating with nonpolar liquefied gas at pressure exceeding atmospheric pressure; reducing pressure to the value of atmospheric pressure at rate providing freezing of fruits. EFFECT: simplified method and improved resistance of juice to microbic damage.
