PROBLEM TO BE SOLVED: To adhere condensate to a surface of a food and to prevent drying of the food by freezing the surface of the food by a quick cooling, and then cooling the food to a temperature higher than a freezing temperature and to a set temperature higher than the freezing temperature with high humidity air. SOLUTION: A temperature of food heated, cooked and contained in a refrigerator 1 is in a high temperature state of about 60 to 80 deg.C. Then, in the refrigerator 1, cold air having a temperature of -40 deg.C and a wind speed of 5 m/s is fed to a cooling chamber 6 for 5 min. A surface of the food is frozen at once by the quick cooling. Then, the chamber 6 is cooled to -30 deg.C. A temperature of the food becomes about -5 deg.C, and a core temperature of the food becomes about +40 deg.C. Thererafter, warm air of high temperature and high humidity of about +24 deg.C, 90% and a wind speed of 5 m/c is fed to the chamber 6. An operation of adhering condensate to the surface of the food is conducted for 8 to 10 min. When the surface temperature and the core temperature of the food approach 25 deg.C, packaging such as bag-filling or the like is executed.
