Witschimmel cheese is portioned and the cut pieces are packed in sealed containers under an O2-containing conditioning gas. Witschimmel cheese is packaged by a process consisting in (A) cutting the Witschimmel cheese into portions, (B) placing at least one portion of the cheese into a packaging container, (C) introducing into the container a conditioning gas which contains O2 in lower concentrations than are present under normal atmospheric conditions, and (D) sealing the container gas-tight with the cheese and conditioning gas inside.
