PURPOSE: An instant boiled rice in crucian carp soup is produced to reproduce traditional fish gruel into a modern instant food. CONSTITUTION: An instant boiled rice in crucian carp soup is produced by removing the waste matter, scales, and internal organs of crucian carp, washing, boiling in pressure cooker, removing bones, and pulverizing; evaporating the left liquid at 60-70°C to obtain the thick liquid; scalding dried radish leaves, passing through an 1-3cm sieve, and dewatering; making hard-boiled rice, and soaking in cool water for 1-3 minutes, taking out immediately, and dewatering in shade for 2-3 hours; combining the crucian carp liquid, the liquid of dried radish leaves, and hard-boiled rice to make paste of 20-30% moisture; freezing rapidly at -50¯-40°C, and drying under vacuum to contain 2-4% water. |
