PURPOSE: An antitumor functional bean sprouts using germanium dissolved water and a growing method thereof are provided. CONSTITUTION: A method for growing antitumor functional bean sprouts comprises the steps of: washing beans three times with water; draining for 1 hour and soaking in water for 24 hours; and growing at 17 to 20°C for 3 to 5 days supplying with germanium-dissolved water, in which germanium-dissolved water contains 2.5 wt.% of germanium. The yield of bean sprouts grown with germanium water is 10 to 20% as higher as that of bean sprouts grown with general water. In addition, the bean sprouts grown with germanium water improve thickness, width, and length of cotyledon and width and length of hypocotyl; comprise rich edible fibers, vitamin C, phenol, and minerals; have effects of antitumor, antimutation, and inhibition of cancer cell growth. |
