PROBLEM TO BE SOLVED: To obtain the subject sterilized soybean milk of high nutritive value, further improved in functionality, thereby capable of further improving enteric flora by incorporating soybean milk of high nutritive value with heat-sterilized and undenatured lactoferrin in specified proportions. SOLUTION: This sterilized soybean milk is obtained by incorporating soybean milk of high nutritive value, after sterilized and cooled, with 0.1-5.0 wt.%, per 100 g of the soybean milk, of and undenatured lactoferrin which is heat- sterilized after adding an acid to its solution to make the solution acidic, to effect further improving the functionality of the soybean milk and enable the enteric flora to be further improved through the synergistic effect of the Lactobacillus bifidus proliferative effect of the lactoferrin and those of raffinose and stachyose in the soybean milk. |
