PROBLEM TO BE SOLVED: To provide a dehydration method effective for preventing the proliferation of putrefactive bacteria and the degradation of bean jam by forcibly cooling a bean jam in early stage of the dehydration of the jam and improving the dehydration degree by breaking the skin film composed of a coagulating material in dehydration and to provide a dehydration apparatus suitable for the dehydration method. SOLUTION: A dehydration chamber 17 and a pressure chamber 13 are divided with a diaphragm 12 made of a stretchable member. Pipes 10 and 11 are penetrated through the center of the diaphragm 12 and the pressure chamber 13 and a shaft insertion part 11c in the pipe is shielded from the pressure chamber 17. A rotary shaft 19 is passed through the shaft insertion part 11c, which is sealed from the dehydration chamber 17 with a sealing means 20. A crushing member 21 is fixed to the rotary shaft 19 at the side of the dehydration chamber and a driving means 22 is positioned outside of the apparatus. The apparatus is further provided with a means for introducing pressurized water into the pressure chamber 13 and a means 18 for introducing raw material and cooling water into the dehydration chamber 17. |
