A dry composition for forming a pudding when mixed with milk at room temperature contains pregelatinized starch, a tetra-alkali metal pyrophosphate and an alkali metal carbonate or bicarbonate in quantity sufficient to impart a slight alkalinity, e.g. pH 7,5-8,0, to the pudding. Examples are concerned with formulations of pregelatinized pudding starch, cane sugar and anhydrous tetrasodium pyrophosphate with anhydrous sodium or potassium carbonate, and vanilla flavouring and yellow dye or cocoa powder. |
