The specification describes a purified or isolated polypeptide which is capable of desaturating a fatty acid molecule at carbon 5 from the carboxyl end. The polypeptide has an amino acid sequence which has at least 60% homology to 446 amino acid sequence of SEQ ID NO:2 as depicted on page 92-94.
