This seal system, especially for an insulated oven door, has the rear surfaces of the door perimeter and facing surface of the oven surround shaped to form a chicane (31), with an air flow created at the top of the door passing through a gap (49) between the inner surface of the door and oven surround inside the door's peripheral seal (38) and into the door cavity. The peripheral seal is situated as far as possible from the edge of the oven opening.
