PURPOSE: A process for preparing fish gelatin is provided which includes a process of extraction by an acid and acid ph at high temperature. CONSTITUTION: A raw material comprises a fresh of thawed skin of fish when fish is processed as it is. A frozen tuna skin having a weight of 4.5 Kg is thawed. After that, the acquired skin is cut at the size of 20 to 40 cm. The cut skin is mixed and deposited at a reservoir containing a hypo chloric acid having a density of 1.2. An acid tub is manufactured by adding a sulferic acid of 46 ml after adding 6.7L water.
