发明名称 FOAMING LOW-ALCOHOLIC REFINED RICE WINE
摘要 PURPOSE: A foaming low-alcoholic refined rice wine which has higher transparency and better fragrance and a method for preparing thereof are provided. CONSTITUTION: A method comprises steps of: (i) making an undiluted liquor in a low-alcoholic concentration by saccharifying and fermenting steamed rice and malted rice; (ii) separating fermentative thick solution containing yeast from a part of the undiluted liquor by filtering the part of the undiluted liquor through fine-meshed filtering materials or adjusting the part of the undiluted liquor by using a continuous centrifugal machine; (iii) separating a cleaning solution from the other part of the undiluted liquor by pressing the other part of the undiluted liquor; (iv) fermenting the thick solution and cleaning solution in a closed tank; (v) filtering the fermented solution in the closed system when an inside gas pressure of the closed tank becomes 2-5 kilograms/square centimeters; and (vi) sealing a clean filtered solution. The foaming low-alcoholic refined rice wine has an internal container's gas pressure of 2-5 kilograms/square centimeters, a Japanese Sake degree of -70--90, an acidity of 3-4 and an absorbency at 660 nanometer of less than 0.01.
