PURPOSE: An immobilized maltogenic alpha-amylase, that is adsorbed on more than one of polyporous basic particles selected from a group comprising phenol resin, acryl resin and polystyrene resin, is provided. An use of the immobilized maltogenic alpha-amylase in manufacture of a syrup rich in maltose is also provided. CONSTITUTION: A process for the preparation of immobilized maltogenic alpha-amylase comprises steps of: pouring maltogenic alpha-amylase into a solution; pouring more than one of polyporous basic particles into a suspension; adding the solution with the suspension to get immobilized maltogenic alpha-amylase. A process for the preparation of syrup rich in maltose comprises steps of: liquefying starch milk; saccharifying the liquefied starch milk under being of more than one of debranching enzyme selected from a group comprising pullulanase and isoamylase, and beta-amylase; gathering a part rich in maltose and the other part lack in maltose by filtering liquefied, saccharified starch milk with molecular sieve; adding the part rich in maltose and the immobilized maltogenic alpha-amylase to get a syrup rich in maltose. From the syrup rich in maltose, a syrup rich in maltitol and crystallized maltitol can be gained.
