CYCLIC ALKYL BETA-GLUCOSIDE

PROBLEM TO BE SOLVED: To obtain a new compound capable of industrially easily being produced, having aβ-glucosidase inhibiting effect and useful as an inhibitor in producing perfume ingredients. SOLUTION: This new compound is expressed by the formula [wherein, R is a cyclic hydrocarbon; (n) is 0 or 1] and is e.g. cyclopentylβ-glucoside. The compound of the formula is obtained e.g. by reacting glucose with an alcohol such as cyclopentanol in the presence of an acid catalyst such as a strongly acidic cation-exchange resin preferably at 0-100 deg.C and, if needed, by purifying the reaction product through gel filtration chromatography or the like. The compound is useful for inhibiting the formation of perfume ingredients of plants.
