PROBLEM TO BE SOLVED: To realize a method capable of simply measuring the peroxide value of oils and fats in processed food, such as rice confection or the like. SOLUTION: Food is ground to extract oils and fats with a solvent, and the peroxide value of oils and fats in food is measured. At this time, the solvent used in the extraction of oils and fats is divided into oil and fat-containing solvent for measuring the peroxide value of oils and fats and the solvent for measuring the content of oils and fats, and the peroxide value of oils and fats is measured from the oil and fat-containing solvent for measuring a peroxide value by a usual method without removing the solvent to measure the peroxide value of oil and fat processed food. By measuring the wt. of oils and fats extracted with a solvent and the measurement of a peroxide value in parallel, the total process can be made simple and rapid, and a result almost equivalent to a conventional official method can be obtained.
