PROBLEM TO BE SOLVED: To provide a method for producing koji realizing the high quality and stabilization of koji, and at the same time suitable for automation. SOLUTION: The process for producing koji is divided into plural phases such as the first phase of the start of koji production, the second phase in which koji mold buds, the third phase in which the growth of the koji mold starts to become active, the fourth phase in which the growth of the koji mold is active, and the heat generation from the layer of the koji is large, the fifth phase of the maintenance of the koji mold, and the like. Pattern control is applied to each of the first phase and the fifth phase, and fuzzy control is applied to each of the second phase to the fourth phase.
