摘要 PROBLEM TO BE SOLVED: To obtain an antifungal agent suitably used for a food in a hermetically sealed vessel for performing a heat sterilization and capable of preventing the food from degeneration and putrefaction caused by heat resistant fungus without making the fungicidal conditions excessively severe by using a hydrophobic emulsifying agent for a food as an active ingredient. SOLUTION: This antifungal agent suitably used for a food in a hermetically sealed vessel for performing a heat sterilization and capable of preventing the food from degeneration and putrefaction caused by heat resistant fungus without making the sterilization conditions excessively severe, uses a compound of a hydrophilic emulsifying agent for a food such as an ester of an 8-20C saturated fatty acid or a 12-22C unsaturated fatty acid with a polyhydric alcohol such as sucrose, glycerol, a polyglycerol or their derivatives, containing >=70% monoester content and showing >=8 HLB as the active ingredient, and further as necessary is formulated with 0.01-99 pt.wt. lecithin based on 1 pt.wt. hydrophilic emulsifying agent.
