摘要 PROBLEM TO BE SOLVED: To obtain an evaluation method in which the quality of royal jelly can be evaluated by a method, wherein the decomposition of a protein in the royal jelly is used as an index. SOLUTION: In this evaluation method for the quality of royal jelly, the decomposition of a protein in the royal jelly is used as an index. That is to say, the constitution of the protein is analyzed through electrophoresis, chromatography or the like, the protein content which is estimated as an effective component is measured, and the quality is evaluated. When electrophoresis is performed, protein as the effective component forms a single band. When the contained component of the protein is numerous, effect such as an antifatigue action or the like is made proportionately large. Reduction in its content becomes the index of the degradation of the protein. The molecular weight of the protein as the index is, e.g. about 51 kilodatons, and modified polyacryalamide gel electrophoresist is preferable. In addition, the protein as the index of the degradation can be discriminated and quantitatively determined also by chromatography, such as gel filtration chromatography or the like. Consequently, on the basis of the analyzed result, the quality of the royal jelly can be controlled, and the effect of the royal jelly can be discriminated and evaluated.
