PROCESS FOR PRODUCING CHITIN AND CHITOSAN OLIGOMER USING THE ENZYMES FROM GIZZARD OF BROILER

PURPOSE: Provided is a method for manufacturing oligomers of chitin and chitosan which are useful in producing food products like a preservative as well as medical goods to lower cholesterol level, strengthen immune system, and activate the growth of enteric bacteria, Bifidus. CONSTITUTION: A method for manufacturing oligomers of chitin and chitosan is characterized by the next steps of: i) obtaining a hen gizzard, washing the gizzard with 40mM citrate-NaHPO4 at pH 5.2, and adding 1:4(v/v) buffer solution; ii) centrifuging the solution to obtain supernatant; iii) obtaining protein solution showing the activities of chitosanase and protease from the supernatant; iv) adding chitosan solution to the protein solution and reacting the mixture at 50 deg.C for 18 hours; and v) eliminating sediments with 2M KOH to obtain oligosaccharides.
