A process for producing an acidic N-(long-chain acyl)amino acid, characteriz ed by separating at 35 to 80 ~C a mixture of an acidic N-(long-chain acyl)amino acid containing an inorganic salt and a medium consisting substantially of water and t-butanol into an aqueous layer and an organic layer containing th e acidic amino acid and removing the impurity from the organic layer (the step of washing with water).
