The invention concerns an electric deep fryer comprising, in a housing (1), a steel bowl (2) filled with oil (12) up to a specific height (h) defined from the highest point of the bowl (2) base (4), and electric heating means (6) arranged in contact under the bowl (2). The invention is characterised in that the bowl (2) base (4) comprises at least a protrusion (10) rising inside the bowl over a predetermined height (h1) relative to the base (4) and has a summit (10a) constituting the highest point of the bowl (2) base (4).
