The sauce is pre-cooled in a tubular cooler and passed to the top of a cooling tower fitted with a discharge valve and guide plate in its base. The sauce is discharged to a transfer tank fitted with valves for the input of sterile air and for evacuation and also fitted with a suction lance linked to a product pump.
