<p>PROBLEM TO BE SOLVED: To obtain dehydrated and ground vegetables rich in saccharides and reduced in microbial content, and good in appearance, flavor and character. SOLUTION: The vegetables which are dehydrated and ground ones rich in saccharides and containing >=50 wt.% of granules each 0.5-10 mm in size, are obtained by sterilizing the original vegetables with superheated steam immediately followed by lowering the temperature of the resultant vegetables to <=55 deg.C.</p> |
