PROBLEM TO BE SOLVED: To obtain a gelled fish gelatin of high quality without fish taste and odor, that is useful for foods, medicines, photography and the like from fishery by-products obtained, when fishes are dressed into cut meats, by washing skins of fresh living fishes or frozen raw fish skins with water, treating them with an acid, and extracting the washed and acid-treated fish skin with hot water at an acidic pH. SOLUTION: The skins of fresh raw fishes, preferably tuna, catfish, or the like, or thawed raw fish skins are washed with water that is oxidized with an oxidizing agent, for example, sodium hypochlorite, preferably treated with an acid such as, sulfuric acid preferably for 4 hours at an acidic pH, preferably at 2.5-4.5, preferably at 55-70 deg.C to effect hot extraction, thus the objective gelatin is obtained. In a preferred embodiment, the concentration of the oxidizing agent is in an order of 50-1,000 ppm and the acid is used in an amount of 3-20 liters per ton of the fish skins.
