PROBLEM TO BE SOLVED: To provide a new process for producing a fruit fiber food as a new processed food rich in dietary fiber and useful components by utilizing squeezed cake of fruit which has to be discarded as an industrial waste and provide an apparatus having a new structure for the production of the fruit fiber food. SOLUTION: Squeezed cake of a fruit left after the extraction of fruit juice is dried to a prescribed water content and the dried squeezed cake is added to an undried squeezed cake of fruit in an amount of about 40 wt.% to obtain 100 wt.% of the mixture. The mixture is dried with a drier 4 to obtain a dried squeezed cake having a prescribed water content, a fraction corresponding to about 40 wt.% is separated from the dried cake and returned to a new undried squeezed cake of fruit to obtain a kneaded mixture corresponding to 100 wt.% and the product is dried with the drier 4. The above procedures are repeated. Only the dried squeezed cake left after the separation and corresponding to about 60 wt.% is sent to a crushing process, added with a proper amount of additives or the like, and processed to a powdery or granular food. |
