PROBLEM TO BE SOLVED: To provide an apparatus for measuring a decomposition point of a protein without changing the fermentation condition in containers for storing a protein-containing material between the container to be measured and another container too much, and further to provide a method for detecting the end point of Natto fermentation. SOLUTION: This apparatus for measuring a decomposition point of a protein in a material containing the protein has a container for storing the material containing the protein, an ammonia gas-measuring means, and a gas-gathering means. The gas-gathering means recycles the gas to be detected in the storing container through the ammonia gas-measuring means. The ammonia gas- measuring means is a diaphragm-type pH sensor 10, and the point when the pH in an ammonium chloride solution in the diaphragm-type pH sensor 10 during the fermentation of beans is increased is made to be the end point of the fermentation. |
