PROBLEM TO BE SOLVED: To obtain a high-quality soya milk causing little deterioration by storage and usable as a raw material for high-quality Tofu (bean curd) and a drink, provide an easily handleable soya milk pack containing the soya milk and preservable over a long period, provide a process for the production of such soya milk and soya milk pack, and provide a process for easily producing a high-quality Tofu having smooth texture and high water-retainability and serving a dining table with just-made hot Tofu. SOLUTION: The objective soya milk contains suspended soybean protein having extremely low or essentially no dissolved oxygen. The soya milk pack is produced by sealing the soya milk in a pack container. The Tofu is produced by grinding soaked and swollen soybean, boiling the soybean with deoxidized superheated steam for a prescribed period to extract soybean protein and obtain boiled Go (ground soybean juice) and separating bean curd refuse from the boiled Go in deoxidized state without cooling the Go or adding a proper amount of a coagulating agent to the soya milk, thoroughly mixing the mixture, immersing non-corroding electrodes in the mixed liquid and passing electric current between the electrodes to heat the mixed liquid and coagulate the soybean protein. |
