PROBLEM TO BE SOLVED: To obtain an S-hydroxynitrilelyase useful for synthesizing an optically active S-cyanohydrin from a carbonyl compound and hydrocyanic acid in a good efficiency, high purity and high yield by culturing a specific yeast in a medium. SOLUTION: This method for producing an S-hydroxynitrilelyase is to culture an yeast transformed by a recombinant DNA obtained by incorporating a gene encoding the S-hydroxynitrilelyase (EC-4.1.2.37) originating from a cassava, into an yeast episome type expression vector. Further, it is preferable that the yeast episome type expression vector consists of a DNA consisting of a base sequence of a GAP(glycerolaldehyde phosphate dehydrogenase) promoter originated from the yeast belonging to the genus Saccharomyces, or a base sequence in which one or several bases are lost, substituted or added in the above base sequence, and containing the DNA maintaining the promoter activity. |
