N-LONG-CHAIN ACYL ACIDIC AMINO ACID SALT AND ITS PRODUCTION

PROBLEM TO BE SOLVED: To produce an N-long-chain acyl acidic amino acid salt excellent in low-temperature stability without affecting the aroma of a product formulated with the N-long-chain acyl acidic amino acid salt, and to provide a method for producing the N-long-chain acyl acidic amino acid salt. SOLUTION: This N-long-chain acyl acidic amino acid salt has an inorganic salt content of <=1 wt.% based on the N-long-chain acyl acidic amino acid, a tertiary butanol content of 0.1-750 wt.ppm based on the N-long-chain acyl acidic amino acid and further a free fatty acid content of <=3.0 wt.% based on the N-long-chain acyl acidic amino acid. The method for producing the N-long-chain acyl acidic amino acid salt comprises converting >=1/20 of the amount of carboxyl groups in the N-long-chain acyl acidic amino acid into an alkali salt, keeping the temperature of a mixture liquid so as not to exceed 90 deg.C and maintaining the solid material concentration in the liquid at 5-50 wt.% at the time of distillation when removing a hydrophilic organic solvent from the mixture liquid containing the N-long-chain acyl acidic amino acid in a mixed solvent of water with the hydrophilic organic solvent by the distillation.
