The invention relates to salts of the carboxylic function in rosmarinic acid, selected from a sodium salt isolated from tissue of plants of the Labiatae family, rosmarinic acid salts other than the sodium salt, or admixtures of other salts with the sodium salt, the other salts or admixtures being those obtained by cation-exchange with the isolated sodium salt; to an antioxidant material isolated by extraction from tissue of plants of the Labiatae family, which is completely water-soluble and has a long shelf-life at ambient temperatures; to an aqueous solution which comprises the antioxidant material; and to a process for preparing completely water-soluble antioxidant material comprising the sodium salt of rosmarinic acid, and its aqueous solutions.
