PURPOSE: Boiled fish paste added with a herb medicine is provided to get rid of greasy taste and smell of boiled fish paste, accelerate digestion, and prolong preservation period. CONSTITUTION: A herb medicine added to boiled fish paste are, desirably, Schizandrae Fructus 2-10 %, Ginseng Radix 2-15%, Pachymae Fungus 2-15%, Epimedi Herba 2-8%, Corni Fructus 2-15%, Cassiae Cortex 2-10%, Perillae Herba 3-12%, Astragali Radix 5-15%, Angelicae Gigantis Radix 5-15%. The boiled fish paste is produced by adding the powder of above crude drugs and other materials such as cooking oil 1-3%, salt 1%, pyrophosphoric acid sodium 0.3%, L-monosodium glutamate 0.3%, Potassium sorbate 0.19%, saccharin sodium 0.01%, water to frozen fish flesh cut finely, steaming the mixture for 10 minutes and drying, and frying in 140-180°C oil and removing oil. The prepared boiled fish paste has no greasy taste and smell, is digested well, and is preserved for more than 10 days compared to existing boiled fish paste which degenerates after 7 days.
