PROBLEM TO BE SOLVED: To obtain a wheat flour composition having excellent melt in the mouth, an inner phase, etc., useful for cakes such as cookies and cakes, a wheat flour composition for butter cake having excellent melt in the mouth, a volume feeling, etc., even in a low oil and fat content and a mix containing the composition. SOLUTION: This wheat flour composition for cakes comprises 2-50 wt.% of durum wheat flour composed of <10 wt.% particles having >=350μm particle diameter and 98-50 wt.% of wheat flour except durum wheat flour. This wheat flour composition for butter cake comprises 2-50 wt.% of durum wheat flour having <=100μm particle diameter and composed of <10 wt.% particles having >=350μm particle diameter and 98-50 wt.% of soft flour. This mix comprises the composition.
