PROBLEM TO BE SOLVED: To provide a processing method by which head parts of fish can be separated easily and accurately, especially the nasal cartilage is taken out from the fish head parts and separated, further the nasal cartilage is separated into a front snout part and a tail side part, and each portion including the residue is processed to a product into the form to be utilized easily. SOLUTION: This processing method comprises a step for heating head parts of fish to soften the head parts of the fish, a step for giving a rotary power and an impulsive force with the rotary power to the head parts of the fish to separate the head parts of the fish to nasal cartilage and a residue without the nasal cartilage, a step for further separating the nasal cartilage to front snout part and tail side part, and a step for fragmenting the front snout part and removing fat therefrom to provide a paste. The processing method further comprises a processing step for forming the tail side part into the paste, a processing step for removing fat components from the nasal cartilage to form the product into a raw material for a chondroitinsulfuric acid extraction and a step for powdering the paste obtained by forming the before nasal cartilage or the front snout part into the paste.
