PURPOSE:To obtain the subject unpolished rice which is useful for a food material or the like rich in nutrients with versatile utility by frying unpolished rice over a certain temperature, then removing the oil, moisturizing and treating with heat. CONSTITUTION:After unpolished rice is fried in oil such as palm oil at a temperature over 180 deg.C, the oil adhering on the rice is removed. Then, water is added thereto and heat-treated with pressurized steam in a jacketed kettle equipped with a stirrer, as it is stirred intermittently to give the subject unpolished rice. It is preferred that the unpolished rice be combined with an acidulant such as vinegar, and/or alcohol. |
