A method for processing fish heads involving the step of softening the fish heads by heating, then dividing the fish heads into a nasal cartilage fraction and the residue by applying a rotating force accompanied by impact thereto, further dividing the nasal cartilage into a tip fraction and a posterior fraction, cutting the tip fraction into small pieces followed by the elimination of fat therefrom to give a paste, and processing the posterior fraction into a paste too; the step of eliminating fat from the nasal cartilage fraction to give a material for the extraction of chondroitin sulfate; and the step of processing the nasal cartilage fraction or the tip fraction into a paste followed by pulverization. By using this method, fish heads can be easily and surely divided. In particular, the nasal cartilage taken out from fish heads can be further divided into the tip fraction and the posterior fraction and all of the fractions including the residue can be processed into products which are easy to use.
