PROBLEM TO BE SOLVED: To prepare modified gum arabic enabling paste solution to have excellent stability, transparent appearance and emulsibility, and useful for confectionery, drink, health food, coating for tablets, gum jelly, emulsified perfumery, paints or the like by heating gum arabic having a drying loss not more than a specific value at a specific temperature for a long time. SOLUTION: The objective modified gum arabic product is prepared by heating gum arabic having a drying loss not more than 50 wt.% (preferably 20 wt.%, more preferably 15%) at 60-140 deg.C (preferably 80-130 deg.C, more preferably 105-130 deg.C) for >=30 min (preferably 30 min-10 h., more preferably 30 min-3 h.). The heating procedure is carried out in gas or liquid. The gas is preferably an inert gas and the liquid is preferably an inert solvent. |
