PROBLEM TO BE SOLVED: To provide a method capable of producing crystalline L-aspartic acid having high purity by using an aspartase without needing a complicated process with excellent working efficiency. SOLUTION: A method for producing L-aspartic acid comprising acting an aspartase on a diammonium fumarate solution to obtain an L-aspartic acid ammonium solution, adding fumaric acid and subsequently crystallizing L- aspartic acid from the solution. In this method, the L-aspartic acid ammonium solution is heated up to 50-130 deg.C, subsequently fumaric acid is added to the solution at a ratio of 0.4-0.8 mol time the total of the fumaric acid and L- aspartic acid contained in the solution, the mixture is once made a solution by applying shearing force, and then L-aspartic acid is precipitated from the solution. |
