PROBLEM TO BE SOLVED: To obtain a bile salt-activated lipase(BAL), derived from bovine pancreas and hence having properties similar to those of BAL derived from human milk, capable of being massively produced on an industrial scale, and useful for, e.g. normal growth of new born babies. SOLUTION: This bile salt-activated lipase(BAL) is derived from bovine pancreas, having (i) molecular weight of approximately 63,000, determined by electrophoresis, (ii) lipase activity for freeing oleic acid from triolein, which is extremely weak in the absence of bile acid, improved in the presence of sodium taurocholate at 1 mM or more, and shows esterase activity for freeing paranitrophenol from paranitrophenylacetic acid, (iii) glycoprotein containing fucose residue, and (iv) N-terminal amino acid sequence shown by the formula. It is preferable to produce the BAL derived from bovine pancreas by homogenizing bovine pancreas, treating the homogenate with an acid, removing the insolubles, and treating the enriched extract solution by heparin column chromatography to adsorb the BAL, and eluting the BAL.
