PROBLEM TO BE SOLVED: To obtain the subject uniform and high-quality food satisfying all of the flesh color, flesh quality and taste required for finely cut and dried strips of steamed sweet potatoes. SOLUTION: This food is obtained by steaming sweet potatoes followed by alternatel drying the sweet potatoes thus steamed with two kinds of drying air at 40-60 deg.C and 0-15 deg.C, respectively, at intervals of 6-12 h. By the present invention, the objective finely cut and dried strips of steamed sweet potatoes excellent in color tone, palate feeling and sweetness can be afforded; furthermore, by this method, the production process can be put under hygienic quality control, with the result that the objective high-quality product of added value can be afforded. |
