PROBLEM TO BE SOLVED: To provide a binding-preventing agent suitable for starch-including food to be distributed in a dried state especially just as in a form of instant needles and capable of highly preventing the binding among fragments of starch- including food such as instant noodles when producing and after a long-term preservation, to provide instant noodles where the disentanglement of noodles is smoothly carried out when the noodles are dried, are made to become instant noodles and are restored in boiling water, the restoration is carried out uniformly in a short time, eating quality is excellent and the binding of noodles is effectively prevented even after long-term preservation and to provide a method for producing the same. SOLUTION: This agent for preventing starch-including food from mutually binding comprises water-soluble polysaccharide and trehalose. The instant noodles are produced by imparting the agent to the surface of noodles before being dried when producing instant noodles by adding water to grain powder of a raw material, kneading the mixture to make dough for noodles, forming noodles from the dough, steaming the noodles and drying them. |
