Extracted fruits are treated by extract prepared at extraction with nonpolar liquefied gas of biomass of microorganisms Saprolegnia parasitica and aged for 3-8 h. Then fruits are crushed by ultrasound in presence of peroxidase and blended with sugar syrup. EFFECT: increased stability of juice to microbial spoilage.
