PROBLEM TO BE SOLVED: To provide a vacuum cooling device capable of cooling a food down to a lower temperature than the usual temperature. SOLUTION: There are provided a processing tank 2 for storing foods to be cooled; a water ejector 1 or a water-sealed vacuum pump acting as a vacuum generating device for making vacuum within the processing tank; a vacuum pipe 9 for connecting the processing tank with the vacuum generating tank; a circulating water tank 3 for storing the circulating water used in the vacuum generating device; a circulating pipe 10 for circulating the water between the vacuum generating device and the circulating water tank; and a circulating water cooling device 12 for cooling the circulating water used in the vacuum generating device, respectively. As the circulating water in the circulating water tank 3, freezing-point lowering water mixed with antifreeze is applied and the circulating water can be cooled to a temperature less than 0 deg.C.
