The invention concerns a method for pitting stone fruits (1), or the like, such as prunes, comprising a stone (2) surrounded with flesh (3), including the following steps: positioning a fruit (1) to be pitted in a cup (4) comprising a through bore (5), part (6) of the fruit emerging from the through bore; pressing a flexible membrane (7) on the part of the fruit emerging from the bore; applying pressure distributed over the soft membrane to expel the stone from the fruit. The invention also concerns a device for pitting stone fruits (1) or the like, such as prunes, comprising a stone (2) surrounded with flesh (3), comprising at least: a cup (4) comprising a through bore (5), the through bore having a flared shape, the wide opening (8) of the flared shape being substantially equal to the largest cross-section of the fruit to be pitted, and the small opening (9) of the flared shape being slightly greater than the largest cross-section of the stones; a flexible membrane (7); means for applying pressure on the flexible membrane for exerting at least a pressure force whereof one component is substantially located on a longitudinal axis (10) of the cup through bore and oriented in the direction from the wide opening towards the small opening.
