摘要 PURPOSE: A method for preparing 'ToenJang' using an extract of green tea is provided, which is convenient to get a medical activation that is a functional effect of a green tea extract, to obtain the superior flavor by being eliminated an offensive smell, to have an effect of long-term preservation. CONSTITUTION: The method of preparing 'ToenJang' containing an extract of green tea comprises the following steps. A first manufacturing 'ToenJang' step is to boil malt soy beans to a pulp at 100-150°C, to ripen them at 30-60°C for 5-10days, then to dry up them at the room temperature for 20-40days to be a soy bean malt. A second processing an extract of green tea step is to put raw green tea leaf or green tea leaf being parched at 150-200°C at 2-4times, at 90°C of hot water of including 50%(v/v) alcohol solvent for 10-30hours in order to get an extract of green tea. A third mixing and maturing step is to mix soy bean malt from a first step and an extract of green tea from a second step at a ratio 10: 1 and to mature them at the room temperature for 20-35days.
