摘要 PURPOSE: A preparation method for sauce is provided, which has chicken bone as main material, which has process of extracting protein and calcium of chicken, determining sub materials and boiling time. CONSTITUTION: A process is composed of several steps. A first step is putting 500g of chicken bone, 2,500g of water, two olive leaves, five pepper particles, 5g of salt into steaming tool and then boiling for 40 minutes at 100°C and filtrating contents of tool for making liquid of main materials. A second step is roasting all contents for a minute at 80°C and putting 100g of grinded onion, 50g of grinded pimento, 25g of grinded green pepper, 25g of grinded red pepper into tool and roasting contents for 3 minutes at 65°C. A third step is putting 150g of liquid of main sources, 80g of hot pepper paste, 100g of tomato ketchup into tool and boiling contents for 2 minutes and putting 3g of salt, 1g of pepper, trace of brown sauce and hot sauce into tool. A forth step is stirring and stopping boiling and putting 30g of grinded parsley, 50g of grinded peanut, 50g of almond into tool and stirring contents.
